Looking for a healthier recipe than pie? These strawberry oatmeal bars are a great way to start your day. Also, I never say the word yummy, but the myfruittruck.com Facebook page posted my video and called them yummy, so I thought why not.
Ingredients:
1 cup oatmeal/rolled oats
3/4 cup white whole flour
1/3 light brown sugar
1/4 teaspoon salt
6 tablespoons butter, melted
2 cups of diced strawberries
1 tablespoon of sugar
1 teaspoon of cornstarch
lemon juice to taste
Vanilla topping:
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
1 tablespoon of milk
Instructions:
Preheat oven to 375 degrees.
Line 8 x 8 inch baking pan with parchment paper.
Combine oats, flour, brown sugar and salt into a bowl.
Pour in melted butter. Set aside 1/2 cup of the crumble mixture.
Press the rest into the bottom of the pan.
Scatter strawberries over the crust. Sprinkle the cornstarch over top.
Sprinkle lemon juice and 1 tablespoon of sugar. Sprinkle final 1/2 cup of crumbs over the top.
Toss in oven for 35 to 40 minutes.
Cool bars.
Wisk all topping ingredients together and drizzle over top the cooled bars.
