I just got my strawberries from the Fruit Truck, fresh from Florida, now it's time to put them to good use. I made many different things this time around, but I needed something sweet, so I gave a homemade strawberry pie a try. If you have a sweet tooth this one is for you.

Something different I did with the pie crust, is I got out the food processor and tossed some strawberries I had frozen, into the dough.

Pie Crust:
2 cups of all-purpose flour
1/2 cup of fresh, frozen strawberries
1 teaspoon salt
14 tablespoons of cold, cubed, unsalted butter
*Tips, the frozen berries needed to be washed, dried on a towel, tossed in the freezer for about an hour on parchment paper on a pan, then tossed into a freezer bag
Pie Filling:
5 cups of fresh strawberries, sliced
lemon juice
1 tsp of vanilla extract
1/2 cup sugar
1/3 cup brown sugar
1/4 cup cornstarch
1 tsp. salt
1/4 teaspoon ground ginger
Crumble top:
3/4 oats
1/2 flour
1/2 tsp salt
6 tablespoons of unsalted butter, cubed
Instructions
Crust:
Put 1/2 cup of ice water in the fridge.
Pulse flour, strawberries, sugar and salt. Add butter, not all at once. Mix it in.
Sprinkle half of cold water over mixture, mix together until dough feels not sticky, but moist.
Add flour or more water if need be.
Wrap dough in plastic, chill for an hour or overnight in fridge.
Let dough stand at room temperature a few minutes before rolling out.
I greased my pie dish with coconut oil, you can use flour.
Toss crust in pie dish, crimp edges with fork and toss in fridge while preparing filling.
Filling:
Toss strawberries, lemon juice, vanilla extract, sugars, salt, cornstarch and ground ginger into bowl. Mix until cornstarch disappears. Spoon mixture into pie crust.
Crumble top:
Mix oats, flour, brown sugar, salt and butter into a bowl. Place over the top of strawberries.
Preheat oven to 375 degrees. Bake for 50-60 minutes or until crust is brown. Let pie cool for a couple hours before serving.
