EASY: Peach or cherry, cream cheese crepes, give ‘em a try

You might think crepes and immediately get intimidated, don’t. They are easy to make, and if you mess up they still taste good!

You can make them with any sliced fruit. I chose peaches and added fresh peach jam in the center.


Ingredients:


Crepe batter

1 cup flour

2 eggs

1/2 cup water

1/2 cup milk

1/4 tsp salt (I forgot this. Still tasted good.)

2 tbsp. melted butter


Directions

  1. Whisk together eggs and flour. Add water and milk.

  2. Add salt and butter

  3. Heat pan, grease with a little butter. Heat on medium, so butter doesn’t burn.

  4. Pour crepe batter into hot pan until a light layer covers the bottom. Cook on each side for about two minutes. Take off heat, add toppings.


Toppings

*This is what I did. You can literally do anything you want.


Sliced peaches

4oz of cream cheese

1/4 cup of sugar

1/8 cup of heavy whipping cream

fresh homemade jam

Cool Whip

Powdered sugar (for looks)


Mix all together, toss on crepe and top with Cool Whip and powdered sugar. Fold the corners of your crepe to your desired liking.
